The weather has been CARAZY around here. Usually by the end of January the ground has been frozen for months and we haven’t seen the grass since November. But this year has been full of rain and temperatures in the 40′s. Anyway, on this rainy day I was feeling like a little baking so here is what I whipped up. As you may have discovered around here, much of my recipes are born from what I have available in the fridge. Makes things exciting.
First I mixed up the batter

Then added in one banana that was about to reach maximum ripeness.

Then what was left of the strawberry’s we picked in June. It is always a sad day when you realize your frozen strawberry’s are gone.

Tada! Delicious, moist, and full of fruit.

This recipe is the Tri Berry Muffin recipe from The Barefoot Contessa At Home cookbook. I added 1 cup of frozen strawberries defrosted and juice drained, and one VERY ripe banana, instead of the berries.

YUM! I agree with you on how sad it is when you get to the end of the berries…..:( Right now we’re putting frozen pureed squash into everything. It’s leftover from our summer CSA and there is a lot!
