|My basement freezer is stocked!|
Since this happens to be one of the most searched for topics on my blog I believe it is time to add to the recipes. This is my favorite lasagna recipe and it freezes beautifully. The recipe calls for a large 9 x 12 pan but I use 2 small 8×8 bake pans. This way I make 2 dinners. For our family one 8×8 is PLENTY and we still have leftovers. Schedule to make lasagna one day this week for dinner and freeze the other half. Just like that you already have one meal in your freezer ready to go.
* I don’t use the goat cheese in this recipe. I am usually a huge fan but for some reason I like this recipe much better without it.
** I have replaced the turkey sausage with ground beef, buffalo, and emu from our Meat CSA and it turns out lovely. Just be sure to season the meat well with salt, pepper, and italian spices.
*** Remember, if you are freezing it DO NOT BAKE IT! Put it into the freezer wrapped tightly in aluminum foil (recycled of course) UNCOOKED.
**** You can take it out to defrost the night before or cook following the above instructions. Keeping in mind that you will need to add another hour or so to the cook time if you are putting it into the oven frozen.
